The filling follows a fixed logic — something rich, something pickled, something fresh, something sharp. Grilled meat or tofu brings the richness, pickled carrot and daikon cut it, cucumber and cilantro keep it fresh, and jalapeño provides the edge. It is a full meal that eats like a snack.

- There is jalapeño on it, which is the only heat in the build. Ask us to leave it off if you would rather not have it.
